Quai des Artistes has been a fixture on the Port Hercule waterfront since 1999, occupying one of the most coveted positions in Monaco with the Harbour spread out before its entirely open facade. The restaurant has completed a significant renovation in recent years under passionate new ownership, renewing its spaces while preserving the spirit and energy that made it an institution in the first place. The cooking is faithful to the grand French brasserie tradition: fresh seafood prepared simply and generously, dishes representing the regions of France, with cooking techniques and sauces made properly in house. The ritual of service is taken seriously at Quai des Artistes. Fish is filleted at the table, a leg of lamb arrives on a trolley to be carved to order, crustaceans are presented before preparation and desserts are flambéed tableside. These performances feel earned rather than theatrical in a room where the cooking consistently justifies the attention. The view across Port Hercule towards the Palace adds a dimension that few dining rooms anywhere in the world can match. Artists' studios once established by Prince Rainier III brought painters and sculptors to this corner of the Principality, and the brasserie's name recalls the creative spirit that has always run alongside Monaco's more celebrated pastimes.
