Pavyllon Monte-Carlo, led by Yannick Alleno, is located within the Hotel Hermitage and holds two Michelin stars. The concept centres on sauces, with Alleno having developed a proprietary extraction technique that concentrates flavour from natural ingredients without the use of traditional stocks. The menu presents French cuisine through this lens, with each dish anchored by a sauce of notable depth and clarity. The room is modern and light, with a terrace overlooking the gardens.
