Nobu Monaco
Nobu Monte Carlo brings the global Japanese-Peruvian cuisine of chef Nobu Matsuhisa to a prime position within the Fairmont Monte Carlo, with views over the Mediterranean from its recently redesigned dining room. The Nobu brand needs little introduction in a city of Monaco's standing, and the Monte Carlo outpost delivers the full repertoire that has made the concept a reference point for contemporary Japanese fine dining around the world. Black Cod with Miso, the dish that has become a Nobu signature, appears alongside yellowtail with jalapeño, delicate nigiri and the Omakase tasting menu that hands the evening's direction to the kitchen. The Peruvian influence runs through the menu as a thread rather than a statement, appearing in citrus-cured tiraditos, anticucho preparations and the confident use of chilli alongside Japanese precision. The associated Nobu Bar has developed its own following as a destination for craft cocktails and sake, occupying an intimate space that Monte Carlo regulars have made their own after the casino or a night at the opera. The dining room is open for dinner only, with the smart-casual dress code reflecting the relaxed confidence of a restaurant that has nothing left to prove.
