Mada One
Mada One is chef Marcel Ravin's most personal project, a casual dining concept that distils his Caribbean heritage into something accessible and genuinely original. The name draws on Madininia, the ancient name for Martinique, and the restaurant brings a slice of that island's spirit to the elegant surroundings of One Monte-Carlo. The concept occupies a deliberately relaxed register compared to Ravin's two-Michelin-star Blue Bay, offering a format that blends café, bakery, bistro and patisserie in a single space open from breakfast through the early afternoon. The signature creation is Le Munegu, a pastry that fuses brioche and panettone with Monaco and Mediterranean influences, available alongside healthy breakfasts, composed lunches and an afternoon snack service from 5:30 to 8pm. Takeaway containers are designed to travel in cabin luggage, making Mada One a genuinely useful stop before departing by private jet or yacht. The boutique element stocks oils, spices and kitchen tools inspired by Ravin's cooking, providing an edible souvenir that connects visitors to the chef's culinary world. For those who want to experience Ravin's vision in a setting less formal than Blue Bay, Mada One offers the same quality of thought in a more everyday register.
