Elsa at the Monte-Carlo Beach Hotel holds a distinctive place in Monaco s dining landscape as the first 100 per cent organic restaurant to be awarded a Michelin star. Set within the SBM group s elegant seafront property, the restaurant is certified to Ecocert level 3, with every ingredient on the menu sourced from organic farms or through sustainable wild-catching practices. Chef Melanie Serre, who received the Ethical and Environmental Responsibility Prize from La Liste in 2023, works with around fifteen producers in Provence, the French Riviera, the Alpes-Maritimes, and Liguria, several of them located within a kilometre of the kitchen. The result is a menu that changes with the seasons and reflects the landscape immediately surrounding the hotel, from the olive groves above Roquebrune to the fishing boats that supply the morning catch. The dining room opens onto a sun-drenched terrace at the water s edge, and the combination of the setting, the produce, and the cooking makes Elsa one of the most quietly compelling tables on the coast. The restaurant operates seasonally.
