Marcel Ravin arrived in Monaco from the Caribbean and has spent years weaving together the flavours of his upbringing with the finest produce of the Mediterranean. The results are dishes that feel genuinely personal: reinterpretations of dishes his grandmother prepared in Martinique, elevated with Piedmontese veal, Mediterranean fish and vegetables pulled that morning from the hotel's own organic kitchen garden. The setting at the Monte-Carlo Bay Hotel and Resort matches the ambition of the food, with a panoramic terrace opening towards the sea and an interior that blends warmth with modern elegance. The tasting menu format allows Ravin's storytelling to unfold fully, with each course building a picture of the West Indies as filtered through a classically trained French sensibility.
